I decided to make the best banana bread recipe for myself with the newest addition to Minute® Rice.
Here is the recipe!
- 1 bagMinute® Multi-Grain Medley, uncooked
- non-stick cooking spray
- 3 large eggs, lightly beaten
- 1/2 cup sugar
- 1 ripe banana, mashed
- 3 Tbsp vegetable oil
- 1/4 cup milk
- 1 tsp vanilla extract
- 1/2 up pecans, chopped
- 2 cups baking mix
Mix all the ingredients together for the best banana bread recipe. Preheat your over for 350 degrees. Mine took about an hour to bake all the way through.
I always love an opportunity to use my chalkboard plate. It is great when I am entertaining.

Chicken Brussel Sprout Bake
- 4 cups Minute Rice White Base
- 1 Tbsp Olive Oil
- 1/2 sweet yellow onion
- 4 Whole Skinless Boneless Chicken Brest
- 2 cups Brussel Sprouts, cleaned and quartered
- 2 cups Monterey Jack/Cheddar Cheese Blend(plus 1/2 cup for topping)
- Salt and Pepper to taste
